Other than having to recompile the kernel to support legacy pty devices,
are there any other benefits to going the socat route? Seems both
powerful and overkill!

I can confirm, all running smooth on Debian 7.7.
I am using socat to create PTY links. e.g.:
/usr/bin/socat pty,link=/var/ax25/axip,raw,echo=0
pty,link=/var/ax25/kip,raw,echo=0 &
to create the pair /var/ax25/axip and /var/ax25/kip
