I use the PC Engines APU2C2 personally. They are standard quad core x86 architecture with 2GB RAM so you can run bog standard Linux (Centos being my preference). They have three gigabit NICs and you can add an internal wifi card if required. They run off 12volts and don't need any fans. The BIOS firmware is open source (coreboot).
I've found them to be very reliable, reasonably priced and my company currently has 58 units deployed at various remote sites around the UK.
